Cilantro Salad
From 101Cookbooks.com

1 cup sunflower oil
1 cup evenly sliced shallots, ~20 small

6 ounces asparagus spears, very thinly sliced
1 bunch of cilantro with stems

1/2 teaspoon soy sauce
1/2 teaspoon sugar
1/4 teaspoon sea salt

1/2 cup peanuts, well-toasted, then cooled
1 tablespoon toasted sesame seeds

to serve: herb flowers (garlic chive flowers, chive flowers, etc), optional

Start by making the shallot oil, you can do this up to a few days in advance. Place the oil in a thick-bottomed saucepan or wok, over medium-high heat. When the oil is hot (a “test” shallot should bubble immediately), dial back the heat to medium, sprinkle in the shallots, and cook slowly until they are deeply golden, 15 – 20 minutes. Remove from heat, strain the oil off into a jar, and set aside. Place the shallots on a paper towel and allow them to cool and crisp.

In the meantime, bring a medium saucepan of water to a boil, salt generously, and cook the asparagus for just 15 seconds or so, until bright. Drain, and quickly transfer to a bowl of ice water to stop the cooking. Drain again, and set aside.

Trim any tough stems from the cilantro, and give it a good wash. Dry completely.

Just before you’re ready to serve the salad, whisk together the soy sauce, sugar, sea salt, and two tablespoons of the shallot oil. Place the cilantro, peanuts, asparagus, and sesame seeds in a large bowl. Drizzle the soy dressing over, and give a gently but thorough toss. The peanuts and asparagus like to find their way to the bottom, so be sure to scoop them back on top before serving with some of the reserved crisped shallots, and a few herb flowers on top (if you have them).

Serves 6.

Happy Mother’s Day to all you mother’s out there! Hope everyone had a wonderful day celebrating those that you love.
The email is a bit late this evening due to the beautiful day and late sunset! It was a lovely afternoon to get some transplanting done, before the next round of rains come this week.

We have a great selection this week of spring veggies, strawberries and flowers! The strawberries are in but won’t last long! We hope you are getting plenty and stocking up for winter.

We also have plants this week! A selection of tomato and basil varieties is available. All of these plants are grown organically, starting with non GMO seed and organic potting mix. They are sure to be a great addition to your garden!

Just a reminder that you can find the strawberries under the “Fruits” section of the Market page, and the tomato and basil starts under the “Herb, Vegetable, and Flower Plants” page.

Berea Gardens:  Broccoli !


Our awesome broccoli is now ready and we have red leaf lettuce back in the market this week, too. Our romaine comes from our second planting of a new variety called Green Forest and it is really superb with large heads and sweet, crunchy-juicy hearts.

Happy Mother’s Day to all the Moms out there! My Mom’s favorite garden flower is the yellow marigold, and this week I’m offering 4 packs of small marigold plants for only $1 so get a bunch to deter pests and attract pollinators.

Most items are listed by 6pm Sunday, but check back again before the market closes Tuesday night to see if any other items are ready to be harvested for you! Eat fresh! Eat local! Eat for better health!

Your Tullahoma Locally Grown Market is open.

A few days ago, we announced that Fountain Springs Farm introduced Thanksgiving Turkeys for pre-order. They are already starting to fly away. Remember, there is a limited amount, so the sooner you place your order, the better. You will find “Turkey Deposit” listed in the Meat/Turkey category. Be sure to indicate your desired weight between 14-22 lbs when you place your order.

In November, you will receive a turkey close to the weight you requested and pay the balance based on $3.75 per pound. This is a whole turkey with gibblets. Do not worry, we will send reminders closer to November so you do not buy a frozen turkey.

YOUR MARKET IS CURRENTLY OPEN.
Now is a great time to order meat for your weekend cookouts and other items you need for the week. You can order bread, eggs, milk, vegetables, herbs, meat, freshly roasted coffee, candles, and more. Consider a made-to-order loaf of English Breakfast Toasting Bread or a half-dozen Jumbo Pretzel Rolls. Both of these breads are made from scratch on market day.

Love this time of year, great weather and lots of great eats!

First up, FIVE HENS FARMS has their delicious free-range Ham on SALE for just $5.75 a pound! This is a very good price for some extremely tasty Ham. It’s a limited time offer, so get it while you can!

Next up, more Fresh wild-caught Georgia White Shrimp from Tom’s Awesome Seafood will be available this week. Again, we do not always have this, so take advantage while you can! Both are in the Meat section of The Market.

LEILANI’S has a pretty full slate of cool-weather Produce ready now. Newest arrivals include Bok Choi (aka Pak Choi), red and green varieties of Buttercrunch Minihead Lettuce (very tender and creamy baby head lettuces), Baby Carrots, Swiss Chards (green w. red stems and Peppermint) to go along with Turnips (red and white), Baby Georgia Collards, Kales (see the Kale Chips recipe below), and several varieties of other Lettuces. In the Vegetable section of The Market.

SEND A SUPPORTING THOUGHT out to Bruce Wills of MY DAILY BREAD who will be undergoing open-heart surgery this week. Naturally there will be no Baked Goods available for this Market.

Kale Chips

So easy, so tasty, and like potato chips you can’t eat just one! All you need is some of LEILANI’S delicious Kale, plus salt (seasoned, sea salt, kosher, etc.) and olive oil (drizzled or spray).

PREPARATION IS EASY! Preheat oven to 350. Wash Kale thoroughly, pat dry, cut the leaves off the stems and tear into bite-sized pieces. Use parchment paper or lightly spray a cookie sheet and place the Kale pieces on the sheet. Drizzle or spray the olive oil, salt or season as you wish, then put into the oven and bake until the edges are crispy and brown, about 10-15 minutes. THAT’S IT!

VARIATIONS YOU CAN TRY: Sprinkle with Garlic powder, Onion powder, Pepper, or shaken Parmesan. Be creative, the possibilities are endless.
