Winter Root Hash

Vegan!

Ingredients
2 Sweet Potatoes, medium & cubed
3 Turnips, cubed
1 Red Bell Pepper, chopped
1 Yellow Onion, chopped
1 Celery Rib, chopped
1/2 cup Kale, chopped finely
1 tsp Sea Salt
1 tsp Black Pepper
1/2 tsp Cumin
1/2 tsp Smoked Paprika
1/2 tsp Cayenne Pepper
2 tbsp Butter or Ghee

Step by Step Instructions
  1. Pre-heat oven to 375 degrees F and place a cast iron skillet (8 or 9 inch) into the over to warm. Place the butter in an oven-approved bowl into the oven to melt.
  2. Once melted, add the spices into the bowl to incorporate into the butter. Add the sweet potato, turnip, onion and celery. Mix well. Place the mixture into the skillet and roast in the oven for 15-20 minutes or until the turnips have soften. Stir the mixture, add the kale and continue to cook for an additional 10-15 minutes.
