Roasted Carrot Hummus

Serves: Appetizer or side dish
Vegan!

Ingredients
1 bunch Walker Farms Rainbow Carrots
1 can garbanzo beans
1/4 cup tahini
juice from 2 lemons
2 cloves garlic
olive oil
cumin
paprika
sea salt
pepper

Step by Step Instructions
  1. Preheat oven to 425 degrees. In a roasting pan or on a large rimmed baking sheet, combine the carrots with olive oil, garlic, cumin, salt and pepper. Roast the carrots until tender and browned, stirring occasionally, about 25 to 30 minutes.
  2. In a food processor, pulse the carrots, garbanzo beans and some olive oil. Add the tahini, garlic, lemon juice and spices. Mix until smooth (you can add a small amount of water depending on desired texture) and season to taste.
  3. Enjoy with pita, chips, crackers or fresh veggies!
