Better Breakfast Whole Wheat Pancakes

<p>My mom used to make these delicious pancakes all the time before school. They are quick and easy, but delicious and nutritious!</p>

Serves: Serves 6 people.


Ingredients
2 cup wheat berries
1/2 cup oats
2 eggs
2 1/2 cup milk/buttermilk
1/2-1 tsp vanilla
1/4 cup oil (canola,veg,peanut, etc)
1 1/2 tsp baking soda
dash of salt

Step by Step Instructions
  1. Mix Wheat berries, oats, eggs, buttermilk in a blender on highest speed for 5-6 minutes. Add extra milk by the tablespoon as needed to keep the mixture moving (sometimes the batter stops moving as it thickens). You can also get mixture moving by turning blender on and off again.
  2. After 6 minutes, turn off blender and add all at once: baking powder, baking soda, and salt.
  3. Mix until well blended. Be careful; mixture will sometimes rise above blender pitcher and you may need to transfer it to a mixing bowl.
  4. Pour as usual for pancakes or waffles. Enjoy!
