Brown Sugar Skirt Steak

Ingredients
1/4 cup Brown sugar
Salt & pepper
1 pound Skirt steak (trimmed and cut into 4 portions)
1 large Red onion (cut into thick rounds)
Olive oil
1 Lime (cut into wedges for serving)

Step by Step Instructions
  1. Preheat grill to high heat. Mix the brown sugar, 2 tablespoons salt, and 1 tablespoon of pepper together in a small bowl.
  2. Rub the seasoning mixture onto the steaks and let them sit for 15 to 20 minutes.
  3. Drizzle the onion rounds with the olive oil and season them with salt. Grill them on each side until soft & charred (8 minutes), then set them aside.
  4. Grill the steaks for 2 1/2 minutes on each side. Slice the steaks across the grain and serve them over the grilled onion rounds, garnished with a lime wedge.
