Yellow Squash & Watermelon Salad

Ingredients
6 cups Seedless watermelon (cubed)
2 medium sized Yellow squashes (chopped)
2 medium sized Zucchinis (chopped)
1/2 cup Lemon juice
12 Fresh mint leaves (torn)
1 teaspoon Salt
8 cups Arugula
OR spinach
1 cup Crumbled feta cheese

Step by Step Instructions
  1. Toss the cubed watermelon, squash, zucchini, lemon juice, mint leaves, and salt together in a bowl
  2. Just before serving, add the greens of choice and the feta cheese to the bowl and gently toss the salad again to mix everything together.
