Squash Blossom Quesadillas

Ingredients
1 teaspoon Canola oil (divided)
2 8 inch Flour tortillas
2/3 cup Mozzarella cheese (divided)
1/4 cup Crumbled queso fresco cheese (divided)
1 tablespoon Green onions (thinly sliced,)
6 Squash blossoms (pistils and stems removed)

Step by Step Instructions
  1. Heat 1/2 teaspoon of canola oil in a non-stick skillet. Place one tortilla in the skillet and scatter 1/3 cup of the mozzarella and about 2 tablespoons of the queso fresco cheeses evenly over the top. Sprinkle some of the sliced green onions over the cheese, then lay 3 blossoms onto one side of the tortilla. Gently fold the tortilla over.
  2. Cook for 2 to 3 minutes on each side over moderately high heat.
  3. Repeat with the remaining ingredients, then slice both quesadillas into wedges.
