Steamed Portulaca (Purslane)

<p>Quick and easy purslane recipe. Purslane is very high in Omega3 Fatty Acids. It has 5 times that of Spinach.</p>

Serves: 2 servings
Vegetarian!

Ingredients
2 cup Portulaca (Purslane)
1 tbsp Olive Oil
2 tbsp Parmesan Cheese
1 pinch Salt and Pepper to taste

Step by Step Instructions
  1. Fill and small saucepan or wide skillet with 1 cup water and add garlic cloves turn heat to medium/high
  2. Bring water to a boil, add purslane, reduce heat to low. Cover saucepan or skillet and cook for 6 minutes. The cooking time will depend on how tender your purslane is. Young tender stems cook faster.
  3. Remove from heat and drain. Season with olive oil, salt and pepper. To serve dust with parmesan cheese. Just remember parmesan is a salty cheese, so easy on the extra salt till you taste it!
