Sausage Moringa Egg Casserole

Ingredients
1 lb Mild Sausage
12 Eggs
1 Medium Onion
2 cups Moringa Leaves
1 tsp Garlic Granules
1 tsp Sea Salt
1/2 tsp Black Pepper
1 Small Mariachi Pepper
1/4 cup Coconut Milk

Step by Step Instructions
  1. In large electric frying pan, brown sausage
  2. Chop onion, moringa leaves and pepper. Add onion and mariachi pepper to last few minutes of browning sausage.
  3. Mix eggs with coconut milk, salt, garlic and black pepper (I use an immersion blender)
  4. Add moringa leaves and mix well. Spread evenly in bottom of pan. Slowly pour egg mixture over sausage mixture in frying pan. Cover and cook at 325 for about 20 minutes or until done.
